Burhani is refreshing herbal digestive drink that is served with Biryanis. Burhani is prepared using yogurt, mint(pudina) leaves, coriander leaves, bhaskar labon and other ingredients. It has a tangy, salty, little sour and spicy flavour, which compliements the Biryani extremely well.
In general Burhani preparation is little cubersome as you need to collect various kind of herbs and salts, which may not be readily available in the market. Moreover, it is also difficult to get the proper ratio of the ingredients unless you have a good experience of making it. Burhani is a herbal digestive drink prepared using yogurt & other digestive ingredients like mint (pudina) leaves, coriander leaves and SalmaTheChef Burhani masala. The drink is very popular in wedding luncheon where Biryani is in the menu list as it helps in digestion of the heavy meal. It is salt and sour in taste and gives a very soothing experience with Biryani.
To prepare this drink at home easily, SalmaTheChef has prepared this Burhani masala mix. Please note the ingredients needed and follow the instructions given below to make a perfect Burhani. The following recipe is to make about 900ml - 1000ml of Burhani drink that can be served to 4-5 persons.
- Yogurt - 1kg
- Mint (pudina) leaves [only leaves] - 50g
- Coriander (dhaniya) leaves - 50g
- Green chilli (very small) - 1 pc [use half if very hot]
- Sugar - 1tsp
- Burhani masala - 22g
- Water - 175ml - 200ml
Wash the pudina and corainder leaves thoroughly and strain water. Grind the leaves along with green chilli, little sugar and small amount of yogurt in a mixie to make a smooth paste. In a bigger mixer container add the remaining yogurt and burhani masala mix and mix for 30 seconds. Transfer this yogurt mix and the earlier prepared paste in a mixing bowl. Add 200ml water and hand whisk the total mixture for 40-60 seconds. Strain the burhani and serve.
